Halloumi is a traditional Mediterranean cheese with origins dating back to at least the 14th century, as noted in an Egyptian cookbook. This variety is crafted in Cyprus using a blend of cow, goat, and sheep milk. It is produced in limited quantities, with curds carefully hand-placed into molds and manually rotated. Each cheese is then hand-shaped into a rectangle and finished with a touch of local mint, honoring longstanding traditions. Grilling this block of cheese until it develops beautiful grill marks is both a customary and recommended technique to enjoy this cheese the fullest.
