This 3-5 month aged Tomme Pe Diou is playing hard-to-get in America, but we've snagged some from Caves Béarnaise just for you. Peel back its thin washed rind costume to reveal the star of the show: a moist, flavorful paste with tropical fruit sweetness and a mischievous meaty kick. The season's first batches are fresh and ready for their taste-test close-up, but like summer romance, this cheese won't stick around forever!
