This toma, matured for 60 days, is made from raw Bruna Alpina cow’s milk combined with thistle flower. Its name, which means “small mountain shepherd” in the Occitan dialect, honors Nonna Magno, the grandfather of producer Mario Fiandino. Upholding his heritage, the Bruna Alpina cows on the Fiandino farm receive meticulous care, including exposure to music at specific frequencies to soothe the herd and enhance milk yield. The resulting cheese features a creamy consistency with subtle mushroom notes and fresh flavors of cut grass and milk.
