Gruyere Surchoix - 12 Month - Gourmino

Gourmino is a very small Swiss co-operative of ten cheesemakers who are dedicated to making the finest Alpine cheeses imaginable.  It turns out that others agree as one of the cheesemakers has won Best Cheese in the World three separate times.  

The Gruyere Surchoix has also won multiple awards.  It is aged for about 12 months, which is medium plus where it's starting to develop crystals yet still hangs onto some of its youthful creaminess.  Its flavor is incredibly complex with flavors of stone fruits, boiled ham, chestnuts and vanilla.
