his cheese starts from an Acappella, a little ash-covered goat cheese that is fluffy and creamy under the rind, with a tanginess that has been balanced during aging. A hole is then placed in the middle which increases surface area, aging the cheese much quicker to develop a more gooey and creamy texture. Ostinato means repeated phrases or rhythmic patterns in music, and it reflects the shape and the origin of the cheese.
