By creating a 'regular' batch of soy sauce using soybeans, wheat, salt, water & koji, and then brewing a second batch without salt and water but instead using the first batch, Suehiro produces a soy sauce with a richer, smoother flavor and a thicker texture.

Compared to regular soy sauce, this double brewed version is less salty and boasts a much more intense flavor.
