For nearly 120 years, Yamaki Jozo has crafted authentic Japanese shoyu in Saitama Prefecture using five pure ingredients: organic soybeans, organic wheat, sea salt, koji, and pristine mountain spring water. Fifth-generation brewmaster Kitani-san and his family honor time-honored techniques, creating moromi—the heart of their soy sauce—which ages two years in cedar barrels.
The result is a sophisticated, naturally balanced shoyu with delicate salinity, subtle fruit notes, and deep umami complexity. Free from fillers and preservatives, this exceptional sauce is presented annually to the Emperor of Japan.
