A two-year-aged Gouda from a cooperative dairy in Westbeemster, made from Holstein Friesian breed milk. It is aged at a warmer temperature than most traditional goudas, resulting in a deeper flavor, tyrosine protein crystal crunch, and a creamy texture with hazelnut and caramel notes.
