From a small producer in the Swiss Alps, this classic melting cheese has a smooth, creamy taste and just a little funk and tang. Melts amazingly and is delicious over potatoes and is also amazing in grilled cheese.
Raclette, made with raw cow's milk, is extra creamy and milky, and just begging to be melted over potatoes. As far as quantity goes, 1/2 lb per person is a generous amount.
