From Jasper Hill Farms in Vermont, Harbison is a soft-ripened pasteurized cow's milk cheese with a rustic, bloomy rind. These little wheels are wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the woodlands of Jasper Hill. As the cheese ages, it develops a spoonable texture. The flavor is rich and creamy while also being woodsy and slightly mushroomy with a sweet cream finish. Excellent paired with light red wines such as Pinot Noir or Valpolicella from Italy, or with sparkling wines.
