Hailing from Andante Dairy in Northern California, this is cheesemaker Soyoung Scanlan’s version of St. Marcellin. Aged a minimum of 3 weeks, this little cheese disc develops a nutty, mushroomy flavor while the paste becomes runny and molten near the rind.
