Cheese maker Alan Glustoff likens this cheese to a mix between Cantal and Cheddar. The use of grass fed Holsteins and keeping the milk raw imparts a deeply complex and satisfying result. Notes of dried fruit, lightly nutty with a brown butter sweetness on the finish. This cheese pairs nicely with a high acid red or a Belgian ale.
