A perfect grating cheese. Made in the same way as Parmiggiano Reggiano using the grana process, but with curds cut down to rice grains and wheels pressed to extract moisture, giving it a strong and solid texture. A great alternative to grated Parmigiano cheese on pasta. goes nicely with sweet wines from Austria.

In Switzerland, just 42 dairies continue to produce Sbrinz. The origins of Sbrinz may be traced back to the sixteenth century. Some people think Sbrinz is the oldest cheese in Europe, however this is up for discussion.
