The name comes from an Occitan term for "small mountain shepherd." Toma style cheese crafted with thistle rennet- very common in Spanish and Portuguese cheeses. Aromas of damp earth, mushroom, and cave contrast with the citrusy, floral flavors of the cheese. This little guy seems to be quite the juxtaposition between different styles, but trust us- it works very well.
