The full-size iteration of Mini Harbison! From Jasper Hill Farms, makers of Cabot Clothbound Cheddar, Harbison is a soft-ripened pasteurized cow's milk cheese with a rustic, bloomy rind. The wheels are wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the woodlands of Jasper Hill. As the cheese ages, it develops a spoonable texture. It's woodsy and sweet, balanced with lemon, mustard, and vegetal flavors.
