The flavor is clean and pure, with the light tanginess characteristic of goat’s milk cheeses. Contralto is essentially a goat's milk Reblochon style cheese, soft and pliable with a hint of earthy funk. This cheese is a reflection of the respect Soyoung Scanlan, the cheesemaker, has for the entire process. Everything is done by hand and with the utmost care in small batches.
