This cheese comes to us through the Adopt-an-Alp program, supporting small Swiss creameries. Alp Gantrischli is a cooperative of 8 milking herds and huts that share an alp. Small creameries like these have been hit particularly hard during the pandemic, so supporting them is more meaningful than ever!
Alpkase, made with raw cow's milk, is worked in the manner of a Gruyère, and offers grassy, nutty notes thanks to the wild mountain herbs the cattle graze on. Mellow and wonderfully meltable!
