Although it resembles a wheel of Selles-sur-Cher, this cheese is an entirely different and delicious gem. This cheese hails from Poitou-Charentes, along the French coast, where it is coated in the famed sea salt from Ile de Ré and edible vegetable ash- lending it's signature smokey gray color to the rind. Surprisingly delicate flavor and texture, bursts of tangy lemon and brine come forth on the palate. Pairs nicely with either a sparkling or still rosé, or a chenin blanc. Drizzle with French lavender honey for a special treat!
